TY - THES T1 - A case study of the dimensions of a food court in a selected mall located in Metro Manila A1 - Higwit, Lyn Akiko K. A2 - Florendo, Raquel B. LA - English UL - https://tuklas.up.edu.ph/Record/UP-99796217612562520 AB - The study examined the dimensions of the food court servicescape (i.e. color, layout, lighting, material, signage and wayfinding), determined how Filipino diners utilized the dimensions, and described how customer typologies differed in their usage of the dimensions. The participants included two (2) key informants, two hundred twentyfix (225) survey respondents, and one hundred six (106) on-site observation participants. A mixed-methods approach, following a case study research design and comprising of an ocular visit, two interviews, a survey and non-participant observation, was used to answer the research questions. Purposive sampling was used for the selection of the mall, food court, and key informants, and accidental sampling was used to determine the survey respondents and the participants of the on-site observations. In the analysis of data, the findings from the four phases of the study were synthesised to create new typologies however, no theories were found to adequately explain said typologies. It was found that, although color, layout, lighting, material, and signage and wayfinding manifest through various ways in the food court, only a few had preceptible effects on Filipino diners. The food court emphasized some dimensions other than the five, such as seat and table selection or preference. Filipino diners found (1) layout to be the most important dimension, followed by (2) lighting, (3) signage and wayfinding, (4) material, and (5) color. Filipino diners were classified into three categories or typologies, i.e. individuals, pairs, and groups, and the different customer typologies differed in their usage of the dimensions of the servicescape, especially with layout, seating and table selection, and the length of staying and lingering.
