   <subfield code="a">ABSTRACT Freshly harvested leaves of Capsicum frutescens Linn. (cvs. Labuyo and Haba or var. longum sendt), were held at room temperature (27-29.5°C) for one week. Quantitative changes in moisture, surface color, chlorophyll, carotenoids and proteins were determined in these samples at scheduled intervals. The moisture content of detached leaves progressively decreased during the 7-day period. Colorimetric measurements indicated changes in color, although no leaf yellowing was evident. The chlorophyll declined by ~64-68%, but the proteins appeared to be relatively stable. The decrease in chlorophyll is consistent with the Hunter b value becoming less negative with storage. Capsicum leaves contained very high levels of carotenoids. The total levels in 'Labuyo' and 'Haba' declined by 35-39% from initial levels in both varieties after seven days at room temperature (29°C-29.5°C).
