   <subfield code="a">The study aimed to isolate and characterize probable alcohol-producing yeast strains from seaweeds namely Gracilaria sp., Kappaphycus alvarezii and K. striatum for the production of Gracilaria wine. Isolation method was based on Seshadri and Sieburth (1971). The study proved that trituration for 2-5 minutes of the seaweed extract was the best method in isolating yeast from seaweeds. For screening of alcohol-producing yeasts, fermentation conditions was adapted from Lazado, 2007 (BSF Thesis) and was carried out for 21 days. Saccharomyces cerevisiae was used as reference organism (R). Monitoring of &quot;must&quot; temperature and specific gravity was done on the 7th, 14th and 21st day of fermentation. On the final week of fermentation, alcohol production ranged from 6.08% to 10.14% wherein the top alcohol-producers were isolates MSDO 13, MSDO 14 and MSDO 44 having an alcohol of 9.07%, 10.09% and 10.14% respectively. Top three alcohol-producing yeast isolates were characterized using the conventional method. It was observed that MSDO 14 has the same cultural characteristics as that of Saccharomyces cerevisiae while in morphological and physiological tests MSDO 44 is the one which is more similar. MSDO 13 shows no resemblance to Saccharomyces cerevisiae in any of the tests. It is recommended that additional tests should be conducted to further elucidate the identity of the isolates. Statistical analysis demonstrates that the top three isolates are not significantly different from the reference organisms in terms of alcohol production.</subfield>
